Roses of Beetroot Cured Gravlax is a dish inspired by Ingrid Bergmann and Roberto Rossellini, whose romance rocked Hollywood in the ’40s. As for the soup course, the Delectable Soup of Mirliton Squash honors the fiery romance of Diego Rivera and Frida Kahlo. Chef Walter reveals that the vegetable’s uneven skin, with its tiny ravines and occasional spikes, represents the couple’s tempestuous marriage.

Italy inspired the Duetto di Ravioli, a plate comprised of two handmade ravioli created by Italian Chef Marco Ghini to represent Romeo and Juliet. The pointed ravioli even resembles the statue of Juliet that stands in the plaza of Verona.

The Frozen Chocolate Chili Intermezzo, on the other hand, was inspired by Ferdinand and Isabella, the Spanish rulers who sent Christopher Columbus on his fateful voyage to America.

Meanwhile, the Carré d’Agneau Vert Pre was once served to Prince Rainier and Princess Grace of Monaco at one of the most famous state dinners in White House history during the Kennedy presidency. Mrs. Jackie Kennedy, being of French descent, was the one who consulted with the first French Chef of the White House for the dish.

The Heart of Velvet Ricotta Mousse is a sweet ode to Antony and Cleopatra. The ricotta comes from Italy, just as Antony, while the kunafa represents Cleopatra. And for dessert, two macarons are presented in honor of Napoleon and Josephine. The chestnut macaron represents Napoleon, referencing his birthplace, Corsica, while the pineapple macaron is inspired by Josephine, who was born in Martinique.
