As part of its year-long 10th year anniversary celebration, City of Dreams Manila recently announced the much-anticipated return of world-renowned chef Nobu Matsuhisa. The culinary legend behind the global chain of eponymous restaurants and hotels spanning five continents, last visited Nobu Manila in 2019. This time, he will host a two-night intimate dinner event for discerning gourmands on March 25 and 26, from 5 p.m. to 10 p.m.
His fifth visit to Manila follows close on the heels of Nobu Restaurants’ 30th anniversary celebration in October 2024. Accompanying him are key Nobu Restaurants Group executives: Chief operating officer Hiro Tahara, APAC regional director and general manager of Nobu Tokyo Ichibaku Kobayashi, and corporate chef Herve Courtot.
Together with Nobu Manila head chef Michael de Jesus and head sushi chef Kei Hirukawa, chef Nobu and the visiting team hope to offer an unforgettable gastronomic experience with a curated six-course “Art of Omakase” dinner menu on March 25, and a Canapé Night on March 26, showcasing the inventive and the much-acclaimed Nobu Style, infused with chef Nobu’s trademark “kokoro” (“from the heart”).
“We are elated to welcome chef Nobu once again to Nobu Manila after five years as part of our 10th year festivities. We invite his fans and gourmands to rediscover the Nobu experience with the culinary legend himself,” shared Geoff Andres, City of Dreams Manila property president.
The Omakase menu includes: a Nobu Sashimi Selection consisting of Shima Aji (white trevally) Jalapeño, Hirame (olive flounder) Tiradito, and Sawara (mackerel) New Style; a generous Nobu Chef Sushi Selection like Uni (sea urchin) with Nikiri; Wagyu with Ponzu, Toro (tuna) Yuzu Miso with Caviar, and Kinmedai (golden eye snapper) Matsuhisa style; Chilean Sea Bass Jalapeño Miso; Wagyu Beef with Shiitake Millefeuille; and Matcha Coconut as a sweet conclusion to a one-of-a-kind celebrity chef-driven dinner experience. The menu is offered at P8,500 net per person.
The Canapé Night at P5,000 net per person on March 26 features a luxurious array of various Nobu signatures served canapé style, including passed options and live stations.
Highlights include Yellowtail Jalapeño, Salmon Karashi Su Miso, and Kinmedai Tiradito, and Nobu Style Lapu-Lapu Sisig. Live stations include Gallagher Oysters paired with custom Nobu sauces at the Fresh Oyster Bar; hot pass Black Cod Butter Lettuce, Seared Scallop and Foie Gras with Vanilla Miso, and Umami Seabass, Spicy Tuna Crispy Rice; Wagyu with Spicy Ponzu, and Salmon with Spicy Miso at the Nobu Tacos Station; Wagyu Beef Chahan, Tiger Prawn Teppanyaki with miso yogurt, at the Teppan and Robatayaki Grill Stations; and for dessert, Miso Cappuccino, Homemade Mochi and Nobu Style Shaved Ice in different variations, to name a few.
A selection of alcoholic and non-alcoholic beverages including Nobu signature mocktails and cocktails is offered for a package price of P1,500 net.
Guests get the rare chance to meet and have a photo opportunity with chef Nobu and can learn more about the culinary master’s inspiring story and recipes through his books, World of Nobu and Nobu: The Cookbook, which are exclusively available during both events, at P5,500 and P 3,500, respectively.
Chef Nobu was awarded the Order of the Rising Sun, Gold, and Silver Rays by the Japanese emperor in 2024. He was appointed the official chef twice at the 81st and 82nd Golden Globes in 2024 and 2025. He was also accorded the Lifetime Achievement Award by GQ in 2017.
