Chef Nobu Matsuhisa wants his last meal to be sushi

If you were to eat one final meal, what would it be? For Chef Nobu Matsuhisa, the answer is easy: sushi!

The chef to the stars named the iconic Japanese dish as his preferred final meal while hosting “The Nobu Experience,” a one-night culinary affair that allowed diners to interact with the world-famous chef and his team as they created delicious dishes at live cooking stations, last March 31, at his eponymous restaurant at City of Dreams Manila.

The event served the restaurant’s signature take on Japanese-Peruvian fusion – such as Green Papaya Salad with Yuzu Dried Miso, Mixed Seafood Ceviche with Quinoa, Aka Miso Braised Short Ribs with Tofu Crema, Nobu Mini Tacos, Norwegian Salmon Toro Nanbanzuke and Uni Shooters with Sake and Ponzu – as well as other gastronomic innovations like Mini Miso Cappuccino and Nobu-Style Halo-halo with shaved iced made of fresh fruit-infused Fiji water.

While his restaurants are known for wowing diners (and the Michelin Guides!) from London to New York, Las Vegas to Manila with his dynamic flavors and refined culinary techniques, Chef Nobu still very much appreciates the simple elegance of classic Japanese food. When asked what is the one thing people need in order to understand the cuisine of his homeland, he promptly answered, “Steamed rice and miso soup!”

Chef Nobu’s latest book, Nobu: A Memoir, was released last November. He generously gifted guests of the event with their own signed copies.
