Chef Tatung Sarthou reinterprets favorite Pinoy dishes

As the country marks its Independence Day this Sunday, Diamond Hotel’s Corniche restaurant is featuring well-loved as well as quaint but delicious dishes from Luzon, the Visayas and Mindanao in an ongoing food festival of Filipino cuisine.

Good food knows no borders. And it comes in every imaginable taste, texture, color, presentation and combination of ingredients.

It may be indigenous to a particular place perhaps due to climate, availability of certain ingredients, or out of sheer tradition. Or teeming with influences from other cultures and nationalities, as people behind such dishes adopt and adapt to the changing landscape and course of history.
