Chef Ken’s journey has brought him far and wide, earning for himself professional experience as a chef in Ireland, Hong Kong, China and Singapore. Now, he has found himself returning to the Philippines, cooking for the restaurant renowned as the Marco Polo Ortigas Manila’s dining jewel.

This veteran chef specializes in a wide range of dishes, and he showcases his mastery of the culinary arts with his Deep-Fried Spare Ribs with Olive and Honey Sauce; a recipe that employs the rich sweetness of honey and olives and fuses it with the crisp flavor of deep fried spare ribs, creating a culinary harmony of sweet and strong.

Chef Ken also brings in familiar flavors from Hong Kong through his Traditional Hong Kong Salted Baked Chicken, proving that he has perfected some of the oldest and most iconic recipes from across the South China Sea. This dish features chicken with an outer layer of skin baked to a mouthwatering golden-brown.

However, Chef Ken’s expertise goes beyond chicken and pork, for he also prides himself in his skill with preparing seafood.
