Origine provides discriminating Pinoy diners with an authentic Spanish dining experience

Situated in the heart of BGC, within the cool confines of Brittany Hotel, this newly opened restaurant is helmed by Chef Alexandra Cacho, the same culinary wizard behind a number of well-loved Metro Manila-based Spanish restaurants in the past.

It’s fresh, it’s authentic, and it’s definitely Spanish! Origine, the newest Spanish restaurant to open in the metro, is now welcoming gourmands to try its unique brand of comida Española in the heart of Bonifacio Global City in Taguig.

Situated within the luxurious confines of the Brittany Hotel, Origine brings the authentic and vibrant flavors of Spain to Filipinos.  Located on the 2nd floor of the hotel, the restaurant boasts a wide, modern space with a warm and inviting ambiance, with elegant décor and contemporary elements that complement the food.

The restaurant is under the creative helm of Executive Chef Alexandra Cacho, a renowned culinary artist with a master’s degree in Spanish culinary cuisine. Although Spanish by blood, the Philippine-born chef is no stranger to the Philippines, having run a number of critically acclaimed restaurants in Manila with her late Filipino husband.

Chef Xandra, who took a sabbatical in her native Spain soon after her husband’s death, found herself answering her heart when she received a call from the Villar Group to helm a new restaurant in Manila. With her adult children’s blessings, she again packed her bags and returned to the country, a place she has grown to love and ball her own. It is her expertise and understanding of the country and its diners that are the driving force behind the restaurant’s menu, which promises to transport diners to the heart of Spain.

Origine invites its patrons on a culinary voyage that spans the spectrum of Spanish flavors, from tantalizing tapas to mouthwatering paellas. The menu offers a wide range of delectable dishes but as you embark on this dining experience, the best choices become apparent.

Start with a refreshing bowl of Gazpacho Andaluz (P175), the chilled Spanish soup that beckons summer. Made with ripe tomatoes, cucumbers, bell peppers, onions, and garlic, this soup is pureed to perfection, creating a smooth and velvety texture. It’s then infused with extra-virgin olive oil, serving as a testament to the harmonious blending of Spanish ingredients.

For a delightful salad, you can’t go wrong with the Salpicón de Marisco (P655), Spain’s summertime staple. This mixed seafood salad comes alive with the vibrant flavors of sofrito, combining the bounty of the sea with a touch of Spanish sunshine.

Origine takes you deeper into Spanish culinary culture with its Pintxos, a unique feature of Basque cuisine. Pintxos are small, bite-sized dishes served atop a slice of bread. Chef Xandra’s recommendation, the Gilda Cosmo (P95), made of cherry tomato, anchovies, and tangy pickled peppers, bursts in your mouth like no other. Pintxo Gel Bacalao (P235), is a revelation in itself. It transforms salted cod into a silky, gelatinous texture that embodies the artistry of Spanish culinary innovation.

No Spanish dining experience is complete without Plato Ibéricos (P1,800), featuring premium Ibérico cured meats, chorizo and salchichón. These delectable meats are served alongside bread, olives, and a variety of cheeses such as manchego and goat cheese.

When it’s time for the main course, Chef Xandra’s famous creation, the Chuletón,  500 grams, (P4,200), takes center stage. This grilled chuletón steak, from the finest cuts of premium Angus beef, is a prime rib grilled to absolute perfection which leaves guests wanting more. It is served with patatas ala pobre and pimiento. At Origine, the steak preparation process has been fine-tuned and the tableside presentation has become an experience in itself

She also takes paellas to a whole new level with options including Paella Ibérico, Paella Negra with Pulpo or Octopus, Paella Gambas & Calamari, and more. Among these, the must-try is the Paella Negra with Pulpo (P1,250), best enjoyed with a squeeze of lemon and a dollop of aioli.

For a sweet conclusion to your Spanish sojourn, Origine’s dessert offerings are a must-try. From the comforting Arroz con Leche to the velvety Tocino de Cielo (a rich custard literally translated as the “bacon of heaven”), the decadence of Chocolate X, and the classic Crema Catalana, these desserts are a homage to Spain’s sweet culinary traditions.
