Homegrown culinary masters entice guests with special coastal cuisine

Culinary delights take center stage at Discovery Shores Boracay and Club Paradise Palawan, two properties under the Discovery Resort brand and managed by Discovery Hospitality Corporation, as Chefs Rick Abasta and Jason Feeney-Cruz bring their mastery and passion for cooking to delight hotel and resort guests with exceptional signature dishes.

Where it all begins: A passion for the palate

Our parents are our first teachers in life, molding and inspiring us with their care, actions and examples. The same holds true for Club Paradise Palawan’s executive chef, Jason Feeney-Cruz, whose culinary journey was ignited by his parents’ love for cooking.

It all started when he was 16 as a dishwasher in a hotel in Manila. Driven by a deep sense of curiosity, he eagerly immersed himself in the culinary world, observing skilled chefs and dreaming of one day becoming an executive chef himself. Years of relentless dedication and learning culminated in the realization of his dream.

Discovery Shores Boracay’s executive chef, Enrique Abasta, shares a similar beginning, where he started as a busboy in Clark Field, Pampanga. Even before that though, he started honing his skills by cooking alongside his mother in their small carinderia while preparing dishes for tricycle drivers near their stall as a breakfast cook. Seizing an opportunity to work in Saipan, Guam, he explored the world of international cuisine. Over the course of five years, Chef Rick has broadened his understanding of culinary techniques, traditions and cultures.

Reflecting on his culinary journey, Chef Rick says, “My pursuit of this career is deeply rooted in my love for food and the unwavering support I’ve received from my family. Their passion for cooking and the joy they find in creating delectable dishes have inspired and motivated me to pursue my own path in the culinary world.”

Uncovering discovery

Now they bring their culinary prowess to Discovery Resorts, which both chefs now proudly call home. Chef Rick Abasta’s relationship with the Discovery Hotels brand started in 2000 when he worked as an executive chef at Discovery Suites for 10 years. Followed by a brief stint as an executive chef in a luxury hotel in Alabang, he then also served as the group executive chef for nearly a decade at a luxury resort in Palawan. Eventually, his journey led him back to his culinary roots at Discovery Shores Boracay (DSB) where he is the executive chef of Sands Restaurant, Indigo Restaurant and Forno Osteria. Drawn by the company’s exceptional management and its esteem as the place where his career initially flourished, Chef Rick intends to dedicate the rest of his culinary career to Discovery Shores Boracay, as a token of his appreciation to the owners and management for the opportunities and trust they’ve given him.

On the other hand, Chef Jason Feeney-Cruz started his discovery journey at Discovery Shores Boracay before transitioning to his current position as executive chef at Club Paradise Palawan. He has a deep appreciation of the unique and rewarding experience that comes with working on a private island. Engaging with guests helps him to better understand their preferences and dietary needs, and tailor the menu to create genuinely personalized dining experiences.

Distinctive styles and leadership

Just as every individual possesses their own flair, so do these two chefs — infusing their culinary creations with unique styles. When asked about their approach, both chefs emphasized innovation and creativity, utilizing the available ingredients while integrating traditional and contemporary techniques and flavors. Inspired by renowned culinary virtuosos such as Chefs Ulrich Binder, Daniel Boulud, Grant Achatz, Bobby Flay and Wolfgang Puck, Chefs Rick and Jason strive to elevate their craft through years of practice and training.

Chef Enrique believes that mentorship and hands-on guidance are crucial in showcasing proper preparation and techniques. Meanwhile, Chef Jason believes in fostering an environment that nurtures growth and development. “I encourage chefs to express themselves through their cooking and set high standards by leading through example and providing constructive feedback,” he shares.

As they continue to lead their teams, they implore their fellow chefs to remain driven and avoid complacency. Chef Jason’s message to aspiring chefs is simple yet powerful: “Be passionate, work hard, and never stop learning. Cooking is a craft that demands dedication, creativity and perseverance.” Chef Rick adds, “Don’t rest on your culinary diploma alone. It takes hard work, patience and unwavering dedication. Stay grounded and let your work speak for itself. Though you may face setbacks and frustrations, remember the sense of accomplishment that awaits when you overcome these challenges.”
